First artichoke of the season leaves me with this conundrum...🤔 Consume or let it bloom?🤷🏼‍♀️

Our family LOVES eating artichokes, but if I let it bloom - it keeps my pollinators happy, attracts 🐞 s, and this thistle flower is just so cool!!👍
